INGREDIENTS: 1 cup Loma Linda Tender Bits 1 can (6 ounces) orange juice concentrate undiluted 6 cups washed torn spinach 1/2 cup chopped celery 1/4 cup chopped green onions 1 can (11 ounces) mandarin oranges drained 1/2 cup unsalted cashews 1/2 cup sweet and sour salad dressing
DIRECTONS:
In a small bowl, combine LOMA LINDA Tender Bits and orange juice; allow to marinate at least 30 minutes. In a large bowl, combine spinach, celery, green onions, mandarin oranges and cashews. Drain Tender Bits and add to salad mixture. Toss gently with sweet and sour dressing.
